Preheat oven on to 375°F
Add 11⁄4 cups of BBQ sauce in a pan and simmer for 5 minutes.
Add John Soules Foods Chicken Fajitas, keep simmering for 5 minutes or until soft.
Spray a casserole dish with canola oil then brush some BBQ Sauce over the bottom of the casserole dish.
Fill tortillas with the BBQ Chicken and 5 oz crumbled Queso Fresco.
Roll the filled tortillas to be a bit snug and place them, seam side down, into the casserole dish.
Repeat for remaining tortillas.
Cover all the tortillas evenly with green enchilada sauce.
Top remaining Queso Fresco over the enchiladas.
Bake uncovered at 375°F for 20 minutes.
Broil on high for 5 minutes more to brown cheese.
Note: You can lightly brush tortillas with olive oil and warm them in the oven or skillet.
