1-16oz Bag Soules Kitchen Chicken Fajitas
4 oz Chorizo Sausage (crumbled)
1⁄2 cup Yellow Onion, chopped
1 Tbsp Jalapeno Pepper, diced
8 Eggs (beaten)
6 oz Salsa
4 oz Pepper Jack Cheese
2 Loose Cups of Tortilla Chips
1 Tbsp Butter
Salt and Pepper
Tip: Packaged chopped onions can usually be found in the produce aisle of your local grocer.
Heat a cast iron skillet on the stove to medium heat. Add butter, onions, and Jalapeño pepper. Cook until onions are translucent (about 30 seconds).
Add a pinch of salt and pepper and the chorizo sausage. Sauté in the onions until cooked.
Add the salsa and the John Soules Foods Chicken Fajitas and cook 2-3 minutes.
Add the beaten eggs and scramble them in the meat and salsa mixture.
Just as the eggs start to thicken into the sauce, add the tortilla chips and fold into the mixture trying not to break up the chips too much.
Sprinkle the pepper jack all over the top.
Pop under the broiler on high for 2-3 minutes to melt the cheese and start to turn golden brown.
