1 tablespoon olive oil, plus more for brushing grates
2 teaspoons fajita seasoning mix
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
2 large green bell peppers, cut into 1-inch pieces, or 2 cups packaged chopped bell peppers
1 large red onion, cut into 1-inch pieces, or 1 cup packaged chopped red onions
12 ounces Soules Kitchen Blackened Chicken, refrigerated
Fresh cilantro, for garnish
1 lime, cut into wedges, for serving
4 cups cooked white rice, for serving
Whisk together olive oil, fajita seasoning, salt and pepper in a large bowl until combined. Add peppers and onion and toss to coat.
Skewer chicken, pepper and onion onto skewers, alternating ingredients evenly.
Heat large grill or grill pan to medium-high heat and brush grates with oil. Place skewers on grill and cook each side for about 2 minutes or until vegetables are fully cooked. Top with cilantro. Serve with lime wedges and over rice.
Tip: Packaged chopped red onions and bell peppers can usually be found in the produce aisle of your local grocer.
