Heat olive oil in large skillet over medium- low heat. Add in garlic, salt and lemon zest, stirring for 30 seconds. Add in sliced cherry tomatoes and cook for 5 minutes, until softened.
Add in chicken to the pan and cook until heated through, about 5 minutes. Add spiralized zucchini and lemon juice to the pan and sauté for 3-4 minutes, until zucchini begins to soften.
Serve with grated parmesan and enjoy!
Tip: Pre-spiralized zucchini can be found in the produce section of many grocery stores.
